The produce stores are overflowing with pumpkins this time of year. Along with a few pumpkin spice lattes to get me into the fall season, I love trying out different recipes using fresh pumpkin! This recipe is one of my all time favourites. It is relatively simple to make but it leaves a lasting impression.
Remember when buying a pumpkin that you buy one of the varietals grown for eating and not carving. Some names to look for are 'Sugar Pie', 'Cinderella' or 'Baby Pam'.
